Quick Pasta Dinner

If you are a single parent, you know the struggle of having to work a 9–5 job, pick up the kids from school, and still be expected to make dinner. I struggle with this a lot, being that me and my partner, both work full time. Here is just one of the meals I like to prepare, on those days where I am just beat and have very little strength or time to cook a full course meal for the family.

Chicken Alfredo pasta.

What you will need:

  1. Uncooked pasta (Angel hair) my favorite.
  2. Boneless Chicken breast (According to your family size) I use 3 pieces
  3. Alfredo sauce
  4. Olive oil ( about 1/2 cup)
  5. Salt (1/2 a teaspoon)
  6. Pepper (1/2 teaspoon)
  7. Garlic (Flakes)
  8. Onion (Flakes)

Start by boiling water in a pot ( I use a 12qt), while you are doing that, in a bowl mix the olive oil, pepper, salt, garlic and onion flakes. Cut the chicken in to bite size pieces, not to big not too small. After that place chicken into a big zip lock back and dump the mix into it. Seal the bad and shake it up. Place it in the fridge until the pot of water comes to boil, and drop the pasta in. while the pasta is cooking you can keep the chicken in the fridge. Grab a skillet and place on the stove with Olive oil. Once the pasta is getting close to being done, take the chicken out and place on the skillet . It shouldn’t take long for the chicken to cook since they are small pieces. Cook until chicken isn’t pink anymore. Once pasta is done, drain the water out. In a pot( it can be the same pot that you cooked the pasta in) Poor some of the Alfredo sauce in the pot , then poor pasta in , mix well. Poor the remainder of the sauce in with the chicken, and mix well. Serve on top of the pasta with the bread of your choice. Enjoy!
